Note: there is soo much going on in these cookies that if you don't have one of the ingredients, Don't worry about it. I think the original recipe didn't have the banana, chocolate chips or raisins in them. I just make the recipe up as I go along. I think they would also be great with nuts or sunflower seeds.
Coconut Rice
This Recipe is Soo easy. Here are the Ingredient's you will need.
Use the measurements on the box of the Minute Rice to decide how many servings you will need. Combine rice but instead of adding Water, add the coconut milk. (although you will probably need to add a little water to make up the difference) Cook by using the instructions on the box. { I actually prefer using the microwave, I think it makes my rice fluffier.}
In the mean time, Toast sweeten coconut in frying pan. (You'll need about 1/4 cup of coconut for each serving).
Top Rice with Toasted Coconut, Pineapple Chunks, Golden Raisins, Salt and Pepper.

We served the rice up, along with some Orange Chicken. (I'd give you the Orange Chicken recipe but it was just Panda Express Orange Chicken Sauce we found at Cosco. That we fried up with some chicken)
